This morning the girls woke up a little after 8:30. It was a nice little morning to sleep in. Being in such a good mood, I decided to make something different from our usual eggs and sausage for breakfast. I had 3 eggs left, so I decided to make French Toast. I grabbed the bread and began mixing the eggs. Shortly thereafter I discovered we were out of milk. UGH! So, let’s get creative and use my pumpkin pie spice coffee creamer. Went to ope the bread and it was moldy. WHAT THE JUNK?! Pancakes it is! Finally, no syrup in the fridge. What…now….? What I ended up making turned out to be amazing!
Pantry Dash Pancakes with Blueberry sauce
- 3 eggs
- about a cup of pumpkin pie spice coffee creamer
- 1 Tb vanilla
- 1 tsp baking powder
- 1/2- 1 cup flour
Mix all together until it is a nice pancake consistency, but a little thin. In a small saucepan, add about 2 cups of frozen blueberries. Sprinkle sugar over the top to lightly coat. Next, add about 1/2 cup grape juice, 1 Tb lemon juice, and some orange zest. I also added about 1 tsp cinnamon. Heat until boiling and simmer for 8 min. Mix in about 2 handfuls flour until well blended and boiling. Turn off and let cool. Pour over the top of pancakes. BOOM! Awesomeness!
