Hi friends! I was in a mood for another one of my quick but delicious meals today so I made one. I decided to go for a Buddha bowl. I filled it with a bunch of veggies and added some rice, beans and tofu to make it more filling.
I love making meals like this one, especially during the week when I come home and I’m starving and all I want is something quick and filling. If I don’t have anything meal-preped for that day yet, that’s something I’d make.
If you don’t know what Buddha bowl is, it’s basically a bowl filled to the point where it has a round top and it looks like the belly of a Buddha. I find this to be pretty interesting haha :)
The best thing about Buddha bowls is that you can customize them to best fit your taste. I’ve always loved rice so that’s what I used. But just because I use something, that doesn’t mean you have to use the same. If you love potatoes, use those. Be creative and enjoy!
I’ve recently started cutting junk food out of my diet because I want my diet to mostly consist of whole foods. I already eat a lot of whole foods but like having treats that became a bit too often so I want to back off a bit. I’ve been on completely whole foods diet before and felt amazing and I want that feeling back. I want that feeling more than I want junk food. So be prepared for a lot more healthy whole foods recipes :)
Ingredients:
• 80 g rice
• 100 g tofu
• ½ bell pepper
• ½ onion
• ¼ cup beans
• leafy greens
• broccoli
Method:
1/ Cook rice.
2/ In a pan add pepper, onion and tofu. Add a splash of oil if necessary and stir fry until the tofu is crispy and the onions are caramelized.
3/ Assemble everything in a bowl and top with sauce of choice.
