Semolina Parfait with Berry Jam and Chocolate Sauce 🍒🍫 || Vegan + Healthy || Step by Step Recipe

Ok guys, you have no idea how excited I am to share this creation with you today. Especially the chocolate sauce part.

I made some semolina parfaits with chocolate sauce and berries which turned out perfect!

For some reason parfaits just keep surprising me. I never expect much from them but end up being very impressed. I’m telling you, they have some form of magic in them. When I’m putting a recipe together in my mind I’m just like yeahh that’ll taste good, you can’t go wrong with the basics, and then when I make it and I try it I’m mindblown. So good! And I’m not just saying that to hype you guys, I’m saying that because I actually liked it that much.

Now is time for the story about how this amazing chocolate sauce was created. As you might know, I’m addicted to my cacao banana oatmeal. I have it almost every single day. Whenever I’ making it there’s a cacao explosion, meaning cacao gets all over my kitchen when mixing it into my oatmeal. When I was making my oatmeal the other day I was thinking of a way to avoid that. So, I mashed a banana, as normally, and then first added cacao instead of oatmeal. I mixed the cacao and banana together and surprise, surprise, it actually didn’t get all over my kitchen. At this point I already had an amazing chocolate sauce in front of me but I wasn’t aware of that. I added oats and blah blah blah.. The rest of it isn’t important here but I can make a whole post on how to make perfect choc nana oatmeal if you guys would like to see that because I think I’m a pro at it at this point. Long story short. There was still some chocolate sauce at the bottom of my oatmeal bowl and when I tried it I just couldn’t believe it. It tasted too good to be true. But it is very much true and very healthy on top of that. I immediately knew this is going to become one of my faves and here we are now.

I used to make a lot of chocolate sauce out of cacao powder and maple syrup which I loved but I later decided to set sweeteners aside and more focus on whole foods. I then for some time lived without choc sauce but I’m back on track now with my banana substitution.

If you guys are chocolate lovers you have to give this a try, I guarantee you’ll love it!

I love thick consistency porridge and semolina is perfect to get that. You can get it thick to the point where it’s not even porridge anymore and you can form balls out of it. I don’t use it too often but I love it when I do so maybe I should start using it more. In case you were wondering, semolina is high in B vitamins, selenium and iron but it’s not a whole food so that’s where it slightly stops.

If you’ve never tried semolina before, I highly recommend you to do so because it’s game changing!

Berries are always a great choice. No matter what you are making you can always make them work. They taste so good and are very healthy on top of that as well! They are loaded with antioxidants, high in manganese and vitamins C and K. I love including them in meals or just having them on its own.


Now that I’ve bothered you for long enough lets get to what we’re all waiting for – the recipe :)

Semolina Porridge with Berry Jam and Chocolate Sauce 🍒🍫


Recipe


- Semolina Porridge 🥣

Ingredients:

• 1 cup plant-based milk
• 3-4 tbsp semolina

Method:

1/ Pour plant-based milk in a small pot and bring to a boil. Be careful you don’t burn it.


2/ Once boiling add semolina, mix and cook for 5 minutes.


- Berry Jam 🍒

Ingredients:

• ¾ cup frozen berries
• 1 tbsp chia seeds

Method:

1/ Melt berries on a stove or in a microwave. They should release juice which is needed to create ‘jam’.

2/ Add chia seeds to the melted berries, mix and let it sit for 10+ minutes.



- Chocolate Sauce 🍫

Ingredients:

  • a banana (make sure it’s ripe and spotty)
  • 1-2 tbsp cacao powder

Method:

1/ Peel banana and break/cut it into small pieces. Add to a small bowl. Mash the banana using a fork.


2/ Once you get ‘puree’ consistency add cacao powder and mix until you get creamy chocolate sauce.



- Assembling

To a mason jar add a layer of semolina porridge, chocolate sauce and berry jam. Repeat until you fill the jar.


Now you can dig in and enjoy!
