Summer weekends are perfect time for BBQ, and Korean BBQ short ribs make the perfect feast. The perfect short ribs come from the Amish Market located on Wilmington Pike. We try to buy all of our meat there because they're fresh, lean, and delicious.
My wife marinates the short ribs in the Korean Galbi marinade sauce overnight combined with Vietnamese spices. This basically means fish sauce included in there somewhere . There are many versions of the recipe that are available on the Internet.
After prepping the meat, my wife is ready to put them all on the grill. We normally cook the meat in a charcoal grill. Coal grilling creates a distinctive smoky smell of BBQ that I prefer over gas-powered grilling. However, we are at my sister's place and she doesn't have a charcoal grill so we have to do with what we have.
Because the meat is relatively thin, make sure to monitor the temperature so that you don't overcook or burn the meat.

When we eat Korean BBQ at the Korean restaurants, they often include many side dishes. I think the side dishes are the best part of the restaurant. We don't have any of that home. We just eat our BBQ with jasmine white rice or French bread. We also roast peppers, zucchini, and other summer vegetables.
To make it easy to serve and eat individually, we cut them into small slices.
