Peace & Love, Blackberry Cake. Vegan / Gluten Free / Sugar Free šŸ’•

Hello friend of Steemit. Happy weekend! Today I want to share a delicious recipe perfect for the weekend snack. It is also healthy and with a unique combination of flavors.

You can not believe how delicious this cake has been, so much so that I have eaten a little in my breakfast. I like to make recipes with special combinations, I love to cook and then share my creations. When we cook we leave a small part of us in the final result; Today you will taste a lot of peace and love in my blackberry cake. you will really love it.

Peace, Love and Blackberry Cake

Ingredients.

2 cups of rice flour.
1 cup of sweetener powder (xylitol, stevia)
1 cup of vegetable oil
150 grams of blackberries
half zucchini
50 grams of cocoa powder
2 teaspoons vanilla
2 teaspoon salt
2 teaspoon baking soda
2 tablespoon apple cider vinegar

Filling and cover:

1 teaspoons vanilla
1/2 cup of sweetener powder (xylitol, stevia)
1 cup of cooked white beans
5 Blackberry

Direction:

To make the cake you need to divide the mixture into two bowl. All the ingredients will be divided in half.

First bowl:

Place 1 cup of rice flour, 1 teaspoon of baking soda, 1 teaspoon of salt, 1/2 cup of sweetener, 1 tablespoon of apple cider vinegar, 1 teaspoon of vanilla, 1/2 cup of vegetable oil and 50 grams of blackberries. Mix all the ingredients very well with the blender.

Second bolw:

Place 1 cup of rice flour, 1 teaspoon of baking soda, 1 teaspoon of salt, 1/2 cup of sweetener, 1 tablespoon of apple cider vinegar, 1 teaspoon of vanilla, 1/2 cup of vegetable oil and 50 grams of cocoa powder. Mix all the ingredients very well with the blender. Add the striped zucchini and continue mixing.

Place each mixture separately in greased packages. Take to the oven for about 30 minutes or until the center is well cooked. Remove from the containers and while you wait for it to cool let's make the filling and cover.

You can not believe how delicious this cover will be, I thought about doing something different than cashew. I love the covers and fillings with cashew, but they are too expensive in my country. This does not stop me, I always think with imagination to do it differently and replace it.

Too easy...

Put in the blender the white beans, the blackberry, sweet and vanilla, mix very well to form a smooth mixture, if it is too thick, you can add little by little juice of blackberry or water, only little by little.

It's time to fill ... You just have to place the mixture on the chocolate cake and then place the blackberry cake on it.

Cover all the cake with the mixture and reserve a little to decorate.

You must go to the refrigerator for 1 hour.

Then you must place more cover and decorate with blackberries, and cocoa powder.

This cake must remain refrigerated, it does not have preservatives. Serve and enjoy your friends with peace and love.
