Harvest season is a wonderful time of year and this year our garden's have done very well. Especially the cucumbers, zucchini, and kale. Today I want to share with you an amazingly simple and very tasty recipe from the garden, Italian cucumber salad. You need 3 medium or 2 large cucumbers, one pepper, one onion and 12 oz. of Italian dressing. I used a red pepper, you can use any color you have available.
slice the cucumbers
and the peppers and onions
combine and toss
pour the Italian dressing over
Toss to coat veggies and refrigerate a few hours or overnight
Enjoy your easy to make and tasty salad!!
