Quick 'n' Tasty Breakfast Muffins...they're healthy AND yeast-free, yay!

Huh? An egg what? I know, egg muffin means something else in America - you're thinking McDonalds breakfast with a sausage patty, egg patty and a 'muffin' bread aren't you? BUT today I am going to show you a recipe that is not only healthier, but super quick and easy to make. Tasty too!

Please explain how this is a muffin...

It's called an egg 'muffin' because you bake it in a muffin tray (genius!) so it is muffin-shaped but not a cake muffin as you know it - is that a record for the number of times the word muffin has been used in a sentence?

Why do I care if this is yeast free?

For those of you that haven't already read my previous post, I indicated that our household recently underwent a diet tweak and we've tried to exclude yeast from our diet. I will do another post on this specifically later but in general, I've tried to make recipes that don't contain any flour (goodbye bread, pastries, cakes, biscuits) or fermented foods (soy sauce, vinegar, pickles). This was a great recipe I started making that we could both eat and hit the spot for breakfast hunger!

Recipe

Step One

Ingredients required - super simple and you probably already have these ingredients at home!

Step Two

Chop + dice everything up (except the egg, duh!)

Step Three

Combine in a bowl and mix - I also added some corn for juicy bursts of flavour :)

Step Four

Spray a muffin tin with oil spray and scoop the mixture into the muffin tin.

Step Five

Bake for 20mins @ 180C and mmm....smell that eggy goodness...

You basically made mini egg frittatas...

Not incorrect but how cute and fun are these little muffins? They took hardly any time to make at all, are super tasty and filling. I personally don't eat a lot for breakfast during the week and it's so easy for me to grab two and eat them on the way to work.

I eat them cold but you can even pop them in the microwave for a few seconds and have them warm.
