Super Healthy Vegan Tacos Filled With Lots Of Nutrients

Who wants some red cabbage tacos filled with veggies, mangos and beet dressing for dinner? 😍🌱

This is a super healthy version of taco shells, using red cabbage leaves instead of the regular tacos, plus you can fill them with any kind of yummy fruits and veggies you like. It is full of nutrients, fiber and vitamins. What else could we ask for? 💛

Filling ingredients:
spinach
lettuce
tomato
onion
fresh cilantro
mango

I don't add any exact portion of the veggies, use as much as you like. You can even replace some ingredients you don't like, or add anything else you can think of. I for example added some pinepple chunks later.

Beet dressing:
120 g cooked beans
1/4 cup coconut milk
4 tbsp apple cider vinegar
1 slice beet
1 slice white onion
1/2 tbsp agave syrup

P.S. Sorry for not making any nice presentation, but I was so hungry, that I couldn't wait to eat them 😅
