Hi my lovely Steemians! After some time of planning, I am ready to start sharing with you all delicious recipes that you can easily cook at home.
I have seen so many recipes everywhere, but quite a lot are always difficult to understand and do at home. So i have put myself in the shoes of the audience and all recipes i will share will be in simplified writtings and accompanied by plenty of photos to show each steps clearly.
I will start my FOOD DIARIES with a Tajine as i learned that @amy-goodrich just love tajines! So in her honor, let's kick start Act 1!
• Salt 8gms
• Black peppercorn 2.5gms
• Ginger powder 2.5gms
• Curcuma powder 2.5gms
• Olive oil 4 tsp
• Mineral water 2tsp
The Veggies:
• Green Peas 80gms
• Zuchinni 80gms
• Gourd 80gms
• Potato 80gms
• Onion 200gms
• Tomato 100gms
• Carrot 80gms
• Green Chili 2pcs
And of course chicken legs – 2 legs cut into 6pcs
How To Proceed …
Mix all the spices, salt and olive oil with 2 tsp of mineral water to have a semi thick marinade.
Rub the chicken pieces with the marinade and keep the remaining for later use.
Cut all the vegetables in big batonnet as shown below. Keep the chilli whole.
Dispose the thick cut onion rings in the bottom of the tajine pot. This will help protect your chicken from burning and also it adds a great flavour to the tajine with a caramelised taste.
Next put the marinated chicken pieces on the onion rings.
Then arrange all the vegetables on top of the chicken pieces.
Add the green peas , chopped coriander and whole green chilli on top.
Drizzle the rest of the marinade on the vegetables and add little water in the tajine.
Add little more of olive oil and you are ready to bring the tajine to cook.
Cook for 20 minutes with a high flame, and always put a wooden spatula in between the cover of the tajine to avoid cooking juices to escape.
After 20 minutes, the tajine will look like this as all the vegetables have given out their water. Time to let it dry now.
Cook on medium fire for further 25 minutes and you will get the below result.
Enjoy it with either Moroccan bread or steamed basmati rice.
