***FOOD PORN*** - My Creations!!!

Hello all Foodies out there!

@progressivechef's back again!
As many of you already knows it, I have been working as a chef for the last 15 years! And my latest positions has been Executive Chef of The Westin Mauritius and most recently Executive Chef of The St. Regis Mauritius!

It has been a great journey indeed, cooking food has always been my passion! And I always push myself to bring out the best! Over the years I have progressed a lot and each dish that I cook I make sure to bring it to a very refined level!

I just love progressive cuisine! That's how I got the nickname of progressivechef!

On this post today, I will share some of my best creations so far with you all! All the photos are mine and taken with my iphone!

Here we go!

Wild honey jelly, goat cheese mousse and figs.jpg

This is a dish I created for a magazine here in Mauritius! It is a Wild honey jelly, goat cheese mousse, spicy crumble and figs.
The combination of honey and goat cheese is simply amazing and soft in your mouth! Slight spicyness with the crumble!

A Solo Papaya Tale....jpg

This one i named it A Solo Papaya Tale.

It's a dessert made with papaya only! I used even the seeds which were dried out first! The macaroon too was made with papaya!

You have confit papaya, a bavarois made of papaya and papaya macaroon! Btw the papaya i use here is named Solo. A small variety but super sweet!

Next one is simply a Seasonal fruits carpaccio and rock lobster with citrus.

So basically fruits are cut in thin slices and marinated with olive oil, salt , citrus juice and a hint of chili powder! The lobster is poached and served cold! Top up with different citrus wedges! Really very refreshing to be served as a starter!

Caipirinha and mojito flavored sugar cane sticks.jpg

This is one of my personal favorite! So easy to make and so delicious! It is called Caipirinha and Mojito flavored sugarcane sticks.

The sugarcane stick is simply macerated for 8 hours in caipirinha and mojito! Served on crushed ice, it just blows you away!

Who has never eaten the ever famous apple tatin? Well this famous classic is being revisited here! I used granny smith apple to make the tatin and added panfried duck liver on top with a port wine sauce!

I named it simply Duck Liver Tatin.

It is served with an apple compote too! Apple and duck liver matches so well together!

Another take on the duck liver! I present you Panfried duck liver with crispy papaya cannellonni and nuts relish.

The papaya is cooked sous vide then wrapped in phyllo leaves and cooked to get super crispy! I used several types of nuts for the relish and some crispy croutons on top! How you find this one?

Fruits salad water jelly, mascarpone cream and raspberry sorbet.jpg

Another refreshing dessert! This dish is one of my best creations so far! The name : Fruits salad water jelly, mascarpone cream and raspberry sorbet.

Here I made a normal fruit salad, but i collected only the juice which is filtered and gelatine is added to have a trembling jelly! The rest is dollop of mascarpone cream and a home made raspberry sorbet!

A lot of details while plating but absolutely worth it!

Oh i just love monochrome! And that's how this dish came to my mind! Fish monochrome, brocoli, zuchinni, gombos, bok choy and green peas.

I used all green vegetables that was available and glazed the fish with green peas puree! My guest were simply overwhelmed with this dish!

I will end this post with this amazing dessert! Warm chocolate soft cake and vanilla ice.

When you cut this chocolate cake, the middle is still liquid and warm! Paired with a vanilla ice cream it is just heavenly good!
