Easy Vegetarian Dinner: Spinach and Mashed Potato Casserole. Meat Optional!

Don't have time or a lot of ingredients? This easy dish can be made in 40 minutes and you may already have all the ingredients!

I am mostly vegetarian but my family is not. So when I create this dish I only put meat on half the pan, the other half I use Paneer cubes (it's an Indian whole milk cheese, similar to Mozzarella.) It is an easy and filling meal that can be satisfy all the family.

Ingredients:

  • 8 potatoes
  • 1 Bundle Spinach
  • 1 lb Ground Beef (optional)
  • 1 1/2 cups Cheddar Cheese, grated
  • 1/4 cup margarine or butter, give or take
  • 1 cup milk, give or take
  • 2 Tbsp Sour Cream
  • Olive Oil or Veggie Oil or even Cooking Spray
  • Cheddar Cheese
  • Salt, Pepper, Garlic Salt to Taste

Peel, cube, and boil potatoes for about 10 minutes or until fork tender.

Mash potatoes, milk, margarine, garlic salt (or just salt) and pepper until whipped. Add more milk if mixture is too dry.

Heat a frying pan on low/medium heat and add olive oil.

Add spinach and wilt, about 3-5 minutes. Add pepper to taste.

Take spinach off heat and DRAIN!!! Very important.

Place spinach back in pan, add sour cream and stir until warmed.

If using ground beef, cook in pan until lightly browned.

Now, take your baking pan and smear a layer of potatoes.

Then add a layer of ground beef if using.

Now add the layer of spinach sour cream mixture.

Now add the final layer of potatoes.

Then take cheddar cheese and sprinkle on top.

Bake on 350 degrees for 15 minutes.

Voila! Dinner is served! Serve with side salad and maybe some bread.
