Your fruit basket overflows with an abundance of your favorite, juicy, exotic fruits but there are still those old apples and overripe bananas in the fridge, that scream for your attention. Ever happened to you before?
Although I tried to be very mindful about my fruit stash and not let anything go to waste, this was the situation last week. The apples were a little too soft to really enjoy their taste by themselves and the bananas seemed to be only good for a smoothie. But somehow I am not a smoothie person these days, but rather enjoy crunchy and fresh fruits in simple meals.
So I gathered all my seeds, nuts and spices and threw some ingredients together to create an apple-banana bowl that lets me get excited for my lunch meal. I don’t know what is so magical about leftover dishes, but somehow they most often taste much better than the original thing.
This one was no exception, the cinnamon and maca powder gave it such a hearty flavor, the nuts added the needed crunch and you can guess how sweet the bananas were. It reminded me a lot of apple crumble, just in its raw and super healthy state.
- 2 old apples
- 3 overripe bananas
- 1 tbsp maca powder
- 1 tsp cinnamon
- 1 tbsp pumpkin seeds
- 4 walnut halfs
This dish threw me right back into cold afternoons in the German autumn season - the colorful leaves outside are turning into real art with shades of yellow, orange and red, the sun sends some comforting beams of light through the tree crowns and after a refreshing walk through the forest you enjoy a warming and hearty apple crumble.
I am in the tropics right now and the weather does not really make you want to tuck yourself into a blanket in front of a fireplace, nevertheless I deeply enjoy such winterly dishes now and then.
