My second entry for steemit culinary challenge is a healthy, tender and smooth dessert with chocolate, hazelnuts and coconut, perfect for morning brunches, afternoon coffee breaks or birthday partys!

Ingredients
Crust
- 1/2 cup almonds
- 1/2 cup hazelnuts
- 1 cup shredded unsweetened coconut
- 1 cup raisins
- 2/3 cup raw cacao
- 3 tablespoons coconut oil, melted
Filling
- 1/2 cups cashews, soaked overnight and drained
- 1 cup hazelnuts
- 3/4 cup agave syrup or maple syrup
- 1/2 cup unsweetened cocoa powder
- 3/4 cup coconut or almond milk
- 2 tablespoon vanilla bean paste
- 2/3 cup coconut oil, melted
- a pinch of fine sea salt
Method
- to make the base, blend the nuts, cacao and coconut into a fine meal in a food processor. add the raisins and melted coconut oil and blend together
- press into a lined cake tin and freeze
- to make the filling, just blend the cashews, cacao, agave, salt and vanilla until smooth and creamy
- add the melted coconut oil and blend until fully incorporated
- pour over the base and freeze for a few hours or overnight
- decorate the cake as you wish
- allow the cake to defrost for 10 minutes before serve
- keep in the freezer ( you can store in the fridge for 2 days, but believe me it will be gone in one!)
