Milkshake Limoncello Cupcakes
Delicious light lemon cupcakes with strawberry marmalade “heart”, topped with fluffy cloud frosting made with Italian mascarpone cheese! These cupcakes are a perfect summertime party treat!
If you wish add a drizzle of limoncello directly onto cupcake before frosting it and it will make these cupcakes more amazing!!

Ingredients
- 1 tablespoon white vinegar
- ½ cup butter, room temperature
- 1 cup sugar
- ½ cup milk
- lemon zest
- vanilla and lemon extra
- 2 tablespoons limoncello
- 1 ½ cup flour
- 1 tablespoon baking powder
- 2 large organic eggs
- pinch of salt
- strawberry marmalade for filling (I used my own homemade marmalade)
Frosting
- 4 tablespoon butter, room temperature
- 140g mascarpone cheese
- 1 cup powdered sugar
- pinch of salt
- ¼ cup heavy cream, chilled
- blue coloring
Method
- preheat oven to 180* C (350F)
- whisk the milk and vinegar and set aside to sour
- mix butter and sugar together
- add eggs , vanilla extract , lemon zest and limoncello until incorporated
- mix flour, baking powder and salt
- add sour milk and stir all gently just until combined
fill 12 cupcake liners with butter and bake at 180* C(350F) for about 15 minutes
- remove from the oven and allow to cool
- once completely cooled, cut out holes in the center of the cupcakes. Only go about three quarter of the way down the cupcakes for the holes
- place chilled strawberry marmalade in each of the cupcakes
- whip butter and mascarpone until well mixed(for frosting)
- add sugar , salt and cream and beat on high until fluffy(about 3-5 minutes)
- top cupcakes with frosting and decorate as desired!
