Pumpkin Biscotti

ingredients:

  • 500 grams of white flour
  • 30 grams butter
  • 250 grams of pumpkin puree
  • 3 eggs
  • 2 teaspoons of baking powder
  • 1 teaspoon cinnamon
  • 0.5 tsp ginger
  • lemon peel
  • a handful of raisins
  • a pinch of nutmeg
  • 2 teaspoons. vanilla extract
  • handful of walnuts
  • 150 grams of sugar

1. Preheat oven to 190 degrees. Cover a baking sheet parchment. Melt the butter. Mix flour, powder and spices in a bowl. Whisk eggs with sugar, add the butter and vanilla sauce in another bowl.

                       

2. Connect the dry and liquid ingredients. Add nuts and knead the dough.

3. Form "sausage" about 10 cm in width and 2 cm height. Bake about 25 minutes. Remove the a baking sheet from the oven and let cool for about 15 minutes.

4. Cut Biscotti into slices about 1 cm wide and place on a baking sheet. Bake an additional 15 minutes.
