Baku kyata

I have many recipes for Azerbaijani sweets, but it's not so easy to find them, I wrote them down in different places, I plan to type everything on the computer so that they will not get lost, but I do not find the time ...

Today I will tell you about delicious and fragrant sweets called kyata or kyata Baku. Kyata is one of the most popular sweets in Azerbaijan, even at home it is cooked according to different recipes. For the first time I tried the kyat in Baku many years ago. Since then, with the word kyata, I smile and feel its pleasant aroma.

You will need

3 cups of wheat flour
2 eggs
1 glass of sour cream
150 gr. Butter

For filling

1 cup of sugar
0.5 cups of flour
100 gr. Butter
1 yolk, for lubricating a kyate
Vanilla sugar to taste
50 gr. Lemon peel
150 gr. Walnuts

Cooking method

  • Knead the dough, and for 30 minutes, put it in the refrigerator. Prepare the filling.
  • To do this, you need to grate the grinding oil from the freezer, add flour and sugar, grate everything. I also add vanilla sugar and lemon zest for flavor, and walnuts.
  • The dough is divided into 3 parts, and each is rolled out to form a roll in a kind of layer, on which we spread our stuffing.
  • Then gently twist the dough with the filling into the roll, and cut into pieces in the form of rectangles.
  • Then make a hole with a fork - they help the air to come out.
  • Fold the pieces on a baking tray, grease the top with egg yolk. Bake in a preheated to 180° C oven for 30 minutes.
