Delicious sauce - tsakhton

In Ossetia, no holiday, and no feast can not do without this delicious sauce based on the leaves of bitter pepper. In order to prepare a sauce called "tsakhton" you need to make some blanks from the leaves of hot pepper.

For cooking, you need pods of hot pepper (when it's still young - green), but always with leaves. In Ossetia, tsakhton is served to any dish, not only to meat, it is even eaten simply with bread, so they make preparations for the whole winter.

But the leaves need to be handled by all, so that the stiff parts of the stems do not hit. Then cut into large pieces. And peppers with leaves to try for 1 minute. After that you need to squeeze them, put them in a saucepan, and pour cold water. Boil 5 minutes, rinse again, squeeze, and then salt.

You need 1 kg. Leaves, 200 gr. Hot pepper, 15 gr. Salt, 5 spoons of vinegar, which in the end will look something like this :-)

  • This mass should be placed in a deep bowl and left under the press for 2 days for leaven.
  • Then put it in small jars.

Still it is possible to prepare and such simple sauce - 500 gr. Sour cream. 7 cloves of garlic and cilantro. This one is also very good.
