Chocolate Chip Cookies - No Milk/No Eggs!

Mmm. Who doesn't love a good cookie? Like a nice warm home made chocolate chip cookie! However when you have decided to change your diet to no milk and egg, it becomes more difficult to have those things. I decided to do some searching to find pleasers that the whole family will love. As my family and I try new things, I will bring you all along with me. Sharing the good, the bad and the ugly with you, as we learn to eat healthier.

First up, is of course chocolate chip cookies! I first had to find chocolate chips that did not contain dairy. That was a struggle but I did find some. The brand is called Cuisine Camino which I found at The Real Canadian Superstore for $5.50 CAD. Of course being curious I opened the bag as soon as I got home and tried a few! They tasted no different! Yum! At that price I dont think I will be eating much chocolate!

I went online and searched for a recipe. I found one that looked good at dailyrebecca I decided to give it a try. They were super easy to make following the directions. I used coconut sugar and cashew milk instead of brown sugar and almond milk. They still turned out amazing. They were so good they are now gone. My kids devoured them! Super soft and sweet! I will definately be making these again! Real soon! If you want to try them, I am posting the recipe below! Enjoy!

Serves: 12-15 cookies

Ingredients

½ cup coconut oil
1 cup brown sugar
¼ cup almond milk
1 tablespoon vanilla extract
2 cups all purpose flour (please note alternate flours WILL change the outcome of the recipe!)
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup vegan chocolate chips

Instructions

Pre-heat oven to 350 degrees
Cream (aka thoroughly mix) together the coconut oil & brown sugar, then add the almond milk & vanilla. The mixture may be really "liquidy" this is OK.
In a separate bowl mix the flour, baking soda, baking powder and salt.
Combine the wet & dry ingredients (it WILL BE crumbly - this is OK), then fold in the chocolate morsels & any other mix-ins of your choosing.
Roll into Tbsp sized balls & place them on an ungreased cookie sheet (or on a sheet of parchment paper on the baking sheet), then flatten them out a bit with your palm. The dough may be a little crumbly, but just smoosh it together and it will work fine!
Bake for 7-10 minutes.
