There are a few apples left, so I made an apple pie with them for afternoon tea.
Materials: 3 apples, 40 grams sugar, 50 grams butter, 100 grams baking powder, 10 grams egg yolk, 20 grams water
First, wash the apples, peel them and remove the cores. Cut the apples into small dices as big as the kernels of corn. Then put the dices into the toaster and press the “jam”. It takes one and a half hours. In the last 5 minutes, put in 20 grams sugar. When the time’s up, the water in the apples evaporates.
Soften the butter at room temperature until you make poke a hole on it easily. Add sugar and baking powder; make it into granules. Add 10 grams egg yolk and 20 grams water, and use hand to knead and forms dough. Cover it with plastic wrap, put into the refrigerator.Roll out the dough into one large circle and put it into the baking tray, removing edges. Insert some small holes with a fork. Preheat the oven to220 ℃, and bake the surface color slightly yellow.
Divide the extra dough into fragments, and twist into strips bigger than chopsticks. About 8 strips.Put the apple dices on the baked pie.Squash the dough strips on the apple pie, and brush a layer of egg liquid.Put it in the center of the oven for10~ 15minutes until the outsides are browned.
家里还有几个没吃完的苹果,于是拿来做成苹果派做下午茶或饭后甜点都很好。
原料:苹果 3个,糖40克,黄油 50克,低粉 100克,蛋黄 10克,水20克。
首先将苹果洗净,去皮去核,切成玉米粒大小的丁儿,放入面包机桶内,启动“果酱”程序。果酱程序需要一个半小时,在剩余5分钟的时候,打开视窗口,倒入20克白糖。程序结束后,苹果馅儿中的水分基本蒸发完,可以直接使用。黄油室温下软化至用手能轻松戳一个洞的状态,加入糖和低粉,双手搓成粗粒状。加入10克蛋黄和20克水,用手和成面团,盖保鲜膜放冰箱冷藏20分钟。将面团擀成圆形,然后放入到派盘中,把派盘边缘以外多余的面去除。用叉子在派皮底上插一些小孔。烤箱上下火,预热200摄氏度,放中层烤至派皮表面颜色微黄。多余的面团分成小块,搓成比筷子略细一点的长条,大约8条左右。取出烤好的派皮,均匀地铺上苹果馅儿。把搓好的长条拍扁,呈方格状摆在苹果馅儿,表面刷一层鸡蛋液。继续放入烤箱中层,上下火200摄氏度烤15-20分钟,至表面焦黄即可。
