Spaghetti Pesto with Zucchini and Shrimp

Ingredients for 4 people
400 gr Spaghetti
200 gr Shrimp
30 gr Roman Pecorino cheese
30 gr Parmigiano
40 gr Pinoli
8 Basil leaves
100 ml Extra virgin olive oil
salt
How to Prepare Spaghetti Pesto with Zucchini and Shrimp

1 Take the zucchini, wash them, grate them and then whip them together with pine nuts, basil, parmesan cheese, pecorino cheese, oil and a pinch of salt. Heat the water in a pot and when it comes to salty boil and throw the spaghetti to bake. Drain them when they are still at the tooth.

2 In the meantime, take a frying pan, add a little oil and add some shrimp in a few minutes. Cook them for a couple of minutes, until they have reached a rosy color. Now add spaghetti to the tooth and stuff it. Turn off the fire and add the zucchini pesto, continuing to keep it. If the spaghetti should look too dry, add a handful of pasta baking water.

3 Before serving the Spaghetti with Pesto Zucchini and Shrimps decorate them with fresh basil.
