Today i'm excited to share with you some of the most renowned food in all of Guangdong. When you think of Cantonese food, it's hard not to think of China town and it's large variety of Dim Sum's. Sure, China town has it's fair share of various Cantonese foods but another place you might not have heard of is Shunde. It is the home of Cantonese cuisine and the fore-bearers of modern Cantonese cuisine. On November 28th, 2014, Shunde was officially recognised by UNESCO as a "Food Capital".
Shunde is known for its very diverse use of ingredients. Whether it's flying in the sky, crawling on the floor, swimming in the water, it's probably edible and could be turned into a Shunde specialty. Shunde cuisine also places much emphasis on the taste and not just the aesthetics of food. Its usually some what lighter tasting than Shunde's food contemporaries. As we move from one season to the next, so does Shunde's cuisine. Summer-Autumn dishes help to cool you down whilst the Winter-Spring dishes pack in more nourishing and nutritional content.
Lets first have a look at the extremely high resolution, poster like Menu. Cantonese food is known for it's roasted meats, here the roasted goose and roasted ducks get most of the attention. I'm practically drooling already just browsing through the menu..
Simmering Soups are a Cantonese specialty, you can see how rich the soup ingredients are.
Finally, lets see the Shunde Dishes
In Guangdong, there is a table custom where all the plates and cutlery are scalded with boiling water to kill any bacteria that might have been missed the first time it was washed. This is why there are usually two boiling pots on the table, one is for cleaning the utensils, and the other is tea for drinking.
Sour and Spicy Jelly Fish, made into such a brightly coloured orange, this dish tastes as bright as it looks!
Sauteed squid with Soy Sauce, this is a very nutritious dish unique to Shunde. The Squid has lots of collagen which is good for a ladies skin. In Shunde, you'll see quite a number of different ways this dish is prepared and served. If this is the first time eating Sauteed squid, you might be put off by it's unusual looks. Rest assured, it's tastiness will more than make up for it's strange appearance.
This bread is an Indian bread called Roti prata. Even though it's not native to Shunde, it's crunchy crispy outside and soft inside is really delicious.
Steamed Fish Slices, very fresh and tender, there's even little water bead droplets on the fish slices.
Tiger Skin Green Pepper, the name comes from the fact that when the green peppers are cooked, the peppers have a sort of paste that forms of the surface of the peppers which resemble the stripes on a Tiger.
Assorted Marinated Meat Platter, this is another specialty of Cantonese cuisine. Usually, the platter will consist of Goose Gizzard, Liver, Claws, Goose Eggs, and Tofu.
These are usually marinated in brine and then a dip condiment akin to vinegar is used to serve. It's really good as a starter dish, opens up the appetite so much so that once you start, you can't stop!
This fish soup has not failed to live up to the high standard menu. The ingredients are again, very complete.
Dessert is red bean soup, I was surprised to find the black bits in the soup are Kelp, this is the first time I'v eaten sweet tasting kelp.

今天我想为大家介绍在广东非常具有地方特色的菜系,说起粤菜,Steemit的朋友们在各国的唐人街吃到最多的是早茶晚茶的小吃和点心,其实在广东的顺德菜也有着独特的味道,很多人称顺德菜为粤菜的代表,食在广东,厨出凤城。凤城为顺德的旧称。顺德是粤菜的发源地 ,2014年11月28日,顺德被联合国教科文组织授予“美食之都”的称号。顺德菜取料非常广泛,天上飞的,地上爬的,水中游的,几乎成为桌上菜。豉油皇有膏吊桶Sauteed Squid with Soy Sauce,粤语里的吊桶仔其实是美味的小章鱼,非常有营养,充满了健康的胶原蛋白,女生吃了皮肤会好,这道菜也是顺德菜里独有的,你在其他菜系里不会看到这种做法。不过它的样子真的很奇怪,如果你第一次吃它,可能会有点害怕。这盘印度抛饼是过来顺德餐厅串门的,不过非常好吃,里面软外面香脆。蒸鱼片,非常鲜嫩,上面还带着小水珠。虎皮青椒,叫这个名字是因为青椒表面被炒得略焦糊,就像老虎的花纹。卤水拼盘,也是粤菜里的一大亮点。一共有鹅胗、肝、掌、鸡蛋和豆腐5种味道,用卤水腌制的鲜香可口,一般要蘸类似醋的佐料,非常开胃又鲜美,吃的让人停不下来。鱼汤真的没有辜负这漂亮的菜单图片,里面的料非常足。甜品是红豆汤,但是里面黑色的竟然是海带,所以这是我第一次吃甜的海带。看完了粤菜始祖的顺德菜,你有什么感受呢?在吃东西方面,你会勇敢的尝试奇怪的食物,还是选择远离,回归自己熟悉的食物?
