This is a great way to start the day...with Amish apple and raisin baked oatmeal. This is an easy recipe and can be made ahead of time and reheated. The tart apples and plump raisins and a taste of cinnamon really add to this delicious dish.

Baked Apple Raisin Oatmeal ~ Amish Style
INGREDIENTS:
3 cups old fashion oats
2 cups chopped apples
1/2 cup raisins
1/4 cup almonds/nuts - optional
1 cup sugar
2 tsp baking powder
1 tsp cinnamon
1 tsp salt
2 beaten eggs
1 cup milk
2/3 cup oil - I used coconut
Preheat oven to 350 degrees
In a bowl combine the oats, sugar, baking powder, cinnamon, raisins and salt. Mix well.
In a separate bowl combine the beaten eggs, milk and oil.
Mix the wet ingredients with the dry ingredients and add the apples. Mix well.
Pour into a greased casserole and gently pat down. You can add nuts to top.
Bake at 350 degrees for 35-40 minutes till the oats are set and golden brown on top.
Let cool for 10 minutes and serve. Pour milk over top.
Enjoy.
