If you're after a sweet treat that won't make you put on the pounds, then you might enjoy this recipe! These mini cakes are similar to carrot cake... very moist and sweet, but made with all-good ingredients and absolutely no sugar. I use honey and dates all the time as natural sugar substitutes, and they are wonderful! You can make these with your children and don't have to worry about them bouncing off the walls!!!
What you will need:
2 eggs
1/3 cup coconut oil/avocado oil/butter
1 large carrot
1 orange
1 tblsp natural yoghurt
3 tblsp honey
75g dates
1 tsp baking soda
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp allspice
2 cups fine wholewheat flour
Method:
In a large bowl beat the eggs with an electric whisk until light and fluffy
Peel and grate the carrot. Grate the orange skin for the zest, and squeeze the juice directly into the bowl. Add the grated carrot & orange zest to the bowl, along with the (melted) coconut oil, avocado oil or butter, natural yoghurt and honey. Whisk the mixture thoroughly.
Chop the dates as finely as you can, and add to the bowl, along with the flour, baking soda and spices. Mix well once again with the electric whisk
Spoon the mixture into silicone cupcake moulds, or into cases in a cupcake/muffin tray
Bake in a preheated oven at 180 degrees Celcius for 15 minutes, then allow to cool on a wire rack
