Homemade Healthy Snacks Series - #4 Cinnamon & Date Crunch Chews - An Original Recipe

I literally just invented these today, and they are amazing!  You get the double satisfaction of crunchiness and chewiness all-in-one!  Again, a no-sugar snack perfect to ease those afternoon rumblings, or a healthy treat for the kids.



What you will need: 


100g dates  

50g bran flakes or cornflakes  

2 tblsp coconut oil, melted  

1 tblsp ground cinnamon 


Method: 


Finely chop up the dates – the smaller the better. 



Using a rolling pin or something similar, grind the cereal flakes into tiny bits. 



In a large bowl mix together the ground-up cereal, chopped dates, cinnamon and coconut oil.


 


In the palm of your hand, squeeze the mixture firmly to bind it together, and form into bite-size flat rounds. Place onto an un-greased baking tray. 



Bake in a pre-heated oven at 180 degrees Celcius for 10 minutes, then transfer onto a wire rack to cool. 



Enjoy on their own or with a nice hot brew :-)
