How to make an awesome roasted tofu. Easy recipe

Don't dump your oven!

This is a great advice for some vegetarian people who are tempted to make everything in a pan. Me too, since I have no patience to cook for hours and I'm no gourmet guy or something. If I can make tasty food in the pan, why bother with ovens or grills?

But when I moved to this house, there was an oven available. And I noticed I was missing great recipes that take just a little longer because of this magnificent way of cooking stuff. I even went in a true marathon trying to cook two roasted vegan christmas meals at the same time. Here's me on that day:



In this recipe, I cooked a less rich variation of Roasted Tofu, for simplicity and money's sake (the christmas recipe has dried fruits such as pin€ nut$...). I won't lie to you: you won't be making this in less than 40minutes, but I assure you won't regret it. On the other hand, it's a super-easy recipe you can change as you please if you leave some key ingredients.

What you'll need

  • 1 big onion
  • 4 garlic cloves
  • 400g tofu
  • Olive oil
  • 600g small potatos
  • Other vegetables at will (here I used 1 eggplant, 1 zucchini and 2 carrots)
  • Condiments at will (I used soy sauce; sweet pepper; thyme; oregano; garlic powder and black pepper)

Use a LOT of condiments if you can, because they really combine on the oven. If you don't have many, try to pick a flavoured tofu.

As for the vegetables, eggplants work great. But don't be picky, just empty that goddamn fridge!



DO IT!

  • Before everything, you need to know what to do with the potatoes. I enjoy boiling them with the peel while I prepare the rest of the recipe. But you can also bake them with or without the peel, you can crush them, you can cut in cubes... Just do something NOW.

  • Now chop the garlic cloves and slice the onion. Make a bittle "bed" with them on the dish you'll be putting in the oven. Put some olive oil and condiments (except the soy sauce) in there too. Do it with love because that onion will be DE-LI-CI-OUS. You can thank me later.

  • Slice the vegetables and the tofu in cubes. Let them be big chunks of vegetables, because that's the fun in roasted food!

  • Put the tofu in a bowl and don't be stingy, FILL that mothafucka with soy sauce and condiments. When you feel it's enough, stir it with a spoon and put more. It's never too much. If possible, do it several hours before cooking.
    Tofu hasn't much taste on its own so you really need to make the flavour with condiments. Being shy with condiments is a common mistake of new vegetarians trying tofu. I've never heard anyone say "the tofu is too flavoured"... Have you?

  • Now put everything in the bowl, together with the potatoes (I forgot to put the potatoes in this photo):

  • Put it on the oven at 200ºC (392ºF) for 20 minutes, until the potatoes golden. You can eat it right away! If you want something more, you can make some rice as well!
