This is a healthy, delicious breakfast and an easy recipe. My homestead version can easily be recreated by anyone just by using a few simple substitutes.
INGREDIENTS
- 4 Farm Fresh Eggs (Can substitute regular eggs)
- 1/2 cup Raw Milk (Can substitute milk of your choice)
- 1 Tablespoon Homemade Butter (Can substitute store-bought butter)
- 1/4 cup Lamb's Quarters (Can substitute spinach)
- 1/4 cup Dandelion Greens (Can substitute bok choy)
- 2 Wild Garlic Cloves (Can substitute garlic of your choice)
- 1/2 Superhot Pepper (Can substitute hot pepper of your choice)
- 1 Fresh Garden Cucumber (Can substitute cucumber of your choice)
- 1/4 cup Shredded Cheese (optional)
- Salt & Pepper (optional)
- 1 1/2 cups Homemade Yogurt (Can substitute yogurt of your choice)
- 1 cup Fresh Elderberries (Can berry of your choice)
DIRECTIONS
Rinse and chop Dandelion, Lambs Quarters, Garlic, and Super-hot Pepper (mine is cross between the Trinidad Moruga Pepper and the Ghost Pepper)
Break Eggs into bowl and add Milk, stirring in the chopped ingredients
Add Salt & Pepper to Egg mixture if desired (optional)
Melt Butter in a pan and add the Egg mixture
In a small pot, heat the Berries with a little water
Flip Egg mixture when firm on the bottom side
Removed Berries from heat and strain if desired (I do with the Elderberries)
Add Shredded Cheese (optional) to the top of the Egg mixture and remove from heat once cooked through
Stir Berry Juice into Yogurt (have fun with it, make designs or patterns and enjoy your morning)
Wash and slice Cucumber and Salt lightly
Spread Cucumber slices around the edge of the open-faced omelette
Garnish Omelette with fresh Dandelion & Lambs Quarters leaves (optional)
Serve with breakfast beverage of your choice (I like Oolong Tea and Raw Milk)
This breakfast was inspired by my new healthier lifestyle and my desire to cook with wild edibles, especially once I compared some wild food with store-bought.
Just by adding the Lambs Quarters and Dandelion to the eggs I gained an incredible amount of nutrients. I gained over 800% of the recommended amount of Vitamin K, almost 200% of Vitamin A, over 40% of Vitamin C and almost 30% of Calcium. How's that for nutrition facts? Also, with the Elderberry, Garlic and Super-hot Pepper, I gave my Immune System a double-boost and increased my metabolism as well. The fresh, local chicken eggs and Raw Milk from grass-fed cows (also used in the Homemade Butter & Yogurt) have a whole bunch of health benefits too. With the Cucumber fresh from the garden and wild foraged Elderberry, Garlic, Dandelion, and Lambs Quarters, this was an extremely cheap breakfast too. Overall, it was very delicious, and you'd be surprised that you don't really notice the presence of the Dandelion and Lambs Quarters mixed into the omelette.
