Beautiful Beets!

So much variation in preparing beets! They can be served hot or cold, a main event or a delightful side dish.

You can slice them, dice them or stack them all fancy like these ones.

These beets are layered with a creamy chevre. The sweet beets and savory goat cheese make a perfect amuse-bouche, appetizer or main in a salad.

I used rather large beets both golden and the classic red for asthetics. While I prefer the flavors of roasting, I boiled them about 20min this time around in order to save a little time and ensure an even cook through. I let them chill in the fridge for about an hour before slicing them as evenly as possible.

Just another tip... Wipe your knife between cuts, otherwise you will have a lot of bleeding. Same if you prepare them too far in advance, they do keep well otherwise. Of they do bleed you can clean it up quickly but scratching it with a knife.
