Cheesy Cauliflower Bake {low carb, gluten free, vegetarian}

Hello foodie friends,

This is my first recipe entry to FRUITS AND VEGGIES MONDAY COMPETITION. For this occasion I'm gonna share with you guys a healthy, low carb, gluten free, vegetarian dish recipe made with cauliflower. Are you a cauliflower fan?

I really like cauliflower, it’s a great vegetable which can be used versatile. This beautiful large white “flower” makes perfect side dishes, casseroles and soups. Good news: cauliflower is low in carbs and full of vitamin C. One of the best ways cauliflower can be prepared is to bake it as a cauliflower cheese. This classic creamy cheesy side dish is super delicious, but contains flour and breadcrumbs, so I thought why not prepare it healthier? My cauliflower bake is lack of any flour, it’s just simply made of double/half-and-half cream and topped with a lots of cheese.

This cheesy creamy garlicky cauliflower bake is the perfect gluten-free and low-carb side dish or vegetarian dinner you can make on busy weekdays.

Cheesy cauliflower is a perfect addition to roasts, baked or grilled meats so you can make a decent low-carb comfort family dinner without complaints. Hope you’ll like this healthy bake!


Cheesy Cauliflower Bake

Prep time: 5 mins | Cook time: 35 mins | Serves:2-4

Ingredients:

  • 1 cauliflower
  • 1 cup | 160 ml single cream or half ad half
  • ½ cup grated cheese (Cheddar, Parmesan)
  • 1 teaspoon garlic powder
  • salt
  • pepper
  • 1 tablespoon butter or olive oil

Let's cook!

  1. Cut the cauliflower into florets.
  2. Preheat the oven to 200°C | 400°F and lightly grease a baking dish with butter or olive oil.
  3. Bring a large pan of salted water to boil. When it starts to boil add the cauliflower florets. Cook the cauliflower until is tender (about 8-10 minutes). When it's completely cooked, drain well and transfer the florets into the greased baking dish.
  4. Mix the cream with garlic powder, salt and pepper to taste. Pour over the cauliflower florets and scatter the top with grated cheese (I used cheddar).
  5. Bake the cauliflower for 20 minutes until the cheese is golden brown.

Diet:vegetarian, low carb, gluten free, sugar free, clean eating
