2 Carrot
2 Onion
3 garlic cloves

Preparation

Sauté the garlic and onion with oil, then place the strips of the carrot and eggplant. Cook over low heat and finally add the bay leaves, salt and pepper. Let stand and then serve, this antipasto can be accompanied either with short or long pasta and also serves as a paspalo for any occasion.
