Watermelon Elderflower Cocktail
Ingredients
2-3 slices cucumber
1 oz lime juice (1-2 limes)
1 oz St. Germain Elderflower Liqueur
1 oz rum
4 oz watermelon juice
Instructions
- Slice cucumber and remove seeds.
- Pour elderflower and lime juice into a glass.
- Add cucumber slices to glass and muddle.
- To make watermelon juice, mash cubed watermelon, then drain the juice out. Add watermelon juice and rum to glass, then stir to combine.
- Serve over ice.
Ingredients
1 Large watermelon
4 3-oz. boxes watermelon Jell-o
2 1-oz. boxes unflavored gelatin
4 c. boiling water
4 c. vodka
Directions
Halve watermelon and scoop out flesh. (Save for another use!)
In a large mixing bowl, combine Jell-o mix and unflavored gelatin. Pour in boiling water and whisk until dissolved, 3 minutes. Add vodka and whisk until combined.
Transfer mixture to a pourable container (such as a glass measuring cup) and pour into halved watermelons.
Carefully transfer to a baking dish or baking sheet (lay on paper towels if the watermelons seem wobbly).
Refrigerate until firm, 4 to 5 hours.
Using a sharp knife, slice and serve immediately.

1 Large watermelon
1 750-ml bottle white wine
2 c. white rum
1 c. Seltzer
1/3 c. lime juice (from about 6 limes)
2 limes, thinly sliced
2 c. assorted fresh or frozen fruit, such as pineapple, blueberries, and strawberries
Directions
Slice off the top third of the watermelon lengthwise (save for later use) and score fruit with a knife. Using a large spoon or ice cream scoop, scoop out watermelon and transfer to blender.
Blend watermelon until smooth. (If desired, strain seeds.)
Add white wine, rum, seltzer, and lime juice and stir until combined, then add limes and fruit.
Refrigerate until chilled, about 2 hours, then serve.
