Crosne, the edible tuber that resembles the Michelin Man

Crosne, or Chinese artichoke, is a very invasive plant. Every single tuber in the ground starts to grow leaves in spring. During summer and fall, the tubers start to multiply at warp speed. In November, you can start harvesting dozens of these delicious, crispy, funny looking tubers. You can keep harvesting all winter long, because the tubers are winter hardy.
