Hey guys! We're in the final stretch of 4-H projects and getting ready for our local fair. Both my girls were very ambitious in their choices of patterns this year and we happened to take a last minute road trip that ate up 3 weeks of our summer, so we're pulling out all the stops to finish our projects this week.
I had a whole chicken in the Instant Pot and even used quick mashed potatoes, but needed a quick and healthy side that even the little guys would eat. I like to have veggies ready first, so when the kids start smelling dinner and start scavenging for snacks, I can offer the veggies right away! They often disappear quickly and I end up making a double or triple batch!
For this video, I cooked the beans almost 5 minutes. That's the way my boys like them. I prefer a bit more snap to them, so I'll often cook one batch just 2- 3 minutes and add 3-4 cloves of garlic for myself.
