What's cooking in the Pirate kitchen this morn?
Is it just us or does this blob of jam look a little like the North Island of NZ?

Recipe:
5 spoons Buckwheat Flour
1 spoon Coconut Flour
1 spoon Rice Flour
1 spoon Sugar
2 spoons Milk Powder (optional; replace with 1 spoon of Corn Flour for Dairy Free)
1 (homechooked) Egg
1/2 tspoon Corriander Powder
1/2 tspoon Bicarbonate of Soda
1/2 tspoon Allspice
Salt to tatse
1 1/2 tspoon Apple Cider Vinegar
Almond Milk
Water
Mix all dry ingredients in a bowl. Make a well in the middle. Crack in the egg. Add a splash of Almond milk. Mix into a thick paste adding more liquid as you need. Once you have a thick paste add vinegar then switch to water and continue to add till you have a thick batter that leaves minimal tracers.
Leave to sit for at least 30 minutes.
Cook in a frying pan with oil or butter over a mid heat until golden brown on both sides.
