Week One of Six Week Health Challenge: "Oatmeal Chicken Meatball" for My Lunch

Now that the holiday celebrations are behind us, it's time to clean up and get back on track with fitness and healthy eating.

Many people perceived that healthy eating is boring, it is about strict dietary limitation or depriving yourself from the food that you love. But to me, healthy eating is about feeling good and stabilizing your mood, improving your health and the ability of the food in giving you more energy.

One of my favourite ingredients when preparing a healthy meal is chicken. Chicken is one of the heathiest meats for the fact that chicken being white meat is much better than the red meat.

Besides that, chicken is a great source of protein, cheaper than red meats and tastier if it is prepared correctly.


Today, I am going to share my lunch pack recipe, which is the "OATMEAL CHICKEN MEATBALLS"

Ingredients

• 1.1kg ground chicken breast
• 3 egg whites
• 1 cup raw oats
• 1 green pepper, chopped
• 1 red pepper, chopped
• 1 red onion, diced
• 1 tbsp garlic, minced
• 1 tbsp ground dried basil
• 1 tbsp dried oregano
• Salt & pepper to taste

Directions

• Preheat oven to 190°c.

• Using your hands, combine all ingredients together in a large bowl.

• Form about 12 meatballs from the chicken mixture. If it is too big, form smaller ones to get more meatballs.

• Spray a baking tray with non-stick spray and place the meatballs in the tray.

• Bake about 30 minutes or until golden brown and serve with your favourite side dish.

This recipe is easy to prepare and tasted very good. The oregano and basil provide extra flair and the ground chicken will definitely help you make and maintain those lean gains.

To complete my meal, I served my oatmeal chicken meatballs with a small bowl of red quinoa salad, fresh greens and sliced tomatoes..
