Everyone in steem kids and parents community. I believe you had a wonderful day. With great joy, am happy to present my entry in this week cooking challenge organized by @steemkidss. This week, my entry is on my local meal known as Ekpangkukwu
Ingredients
Water Yam
Cocoyam
Fish
Cocoyam leaf (Nkukwu)
Red oil
Periwinkle
Cowskin
Crayfish
Scent leaf
Seasoning cubes, Pepper, onions and Salt.
Method
š Peal and slice the water yam. Peal the Cocoyam as well, wash them and keep aside. Using tray with blender(okuok), blend them one after the other.
š Wash the cowskin and cut into smaller shapes, wash the fish, periwinkle put in a pot, add slice onions, pepper, salt, seasoning cube, add small water and cook for 10minute.
š Remove and cut off the Cocoyam leaf from the stuck, wash and drain using Swifter.
š In the blended Water Yam and Cocoyam, add a little salt and mix it thoroughly. Using small quantity of oil, rob on the bottom of the pot and take a small portion of the mixture, put ontop of the wash Cocoyam leaf, fold and placed in the pot.
š Continue the process of folding the mixture till the mixture finish. Then boil hot water and put slowly at one side of the pot, then placed the pot on fire. Allow for 30minute.
š After 30minute, stir the pot so that the bottom will not get burnt. Use a sharp knife and cut the rap mixture into two or more. Allow it to cook very well.
š Add the cook cowskin, fish and periwinkle, pepper, seasoning cubes and pepper. Stir and had a taste. Add granded crayfish and oil, allow it for 2minute.
š Wash and slice the scent leaf. Add on it, stir until everything is mixed very well and off the lights.
Ekpangkukwu is Ready
Ekpangkukwu is very rich meal. Love by many. This meal mostly cook for a new born mother.
Delicious with a nice taste that can make you to finish the whole pot without noticing it. It helps for easy digestion.
