This week, my food diary will be on how to prepare cucumber egg sauce.
Cucumber is one of the edible vegetable fruit with a high content of water. It can be eaten raw, it be blend as smoothie, it can be extracted as juice, it can be used as salad and can also be cook. All this depends on individual choice. Like me, I prefer preparing cucumber as sauce to eating it raw. Let begin our preparation and I hope you will like it.
Ingredients needed
Cucumber
Eggs
Groundnut oil
Onions
Pepper, seasoning cube and salt
Preparation
- Wash the cucumber and onion well, slice it to you desirable shapes and keep aside.
Note, if the cucumber is still fresh, you will have a enough water in it, so you can decide to drain the water out but if the cucumber stays in the house up to 2-3days, you don't need to drain the water has the water content will not be much compare to the fresh one.
- Wash and crack the eggs inside a bowl, add a pitch of salt and seasoning cube.
- Heat your oil in your choice pot. For me I prefer using frypan when doing sauce. Add, your slice onions and stir.
- Add the slice cucumber, add the remaining seasoning cube, add salt, stir and allow it for 5minute.
- Add pepper, stir and have a taste.
- stir again and add the bit egg and allow it for 3minute. After 3minute, stir it thoroughly for everything to mix well and allow it again for 2minute.
- Add small scent leaf, stir and off the light. The cucumber sauce is ready to enjoy.
Enjoy it with bread, boil yam, rice, plantain, potatoe or any other meal of your choice. In this one, I will prefer with white rice.
