Afang soup is the most known soup in the southern part of Nigeria and if you have been to places like Cross River, akwa-ibom, and other southern parts of Nigeria you will get to see how people cherish Afang soup.

Afang leave is also known as Okazi, eru, fumbua, or Koko leaves. When cooking afaang soup waterleaf is needed to make the leaves soften. Besides waterleaf, you will need to cook it with varieties of ingredients, palm oil, and a better swallow such as semovita, pounded yam, or Garri eba. Before we go into how to cook afang soup let's take a look at the most required ingredients.

Afang leaf or Okazi - You can use fresh or dry Afang/Okazi leaf.

  • Water leaf - You just need a small quantity of water leaf to soften the okazi leaf.

  • Meats - You need to use an assortment of meats and my preferred choice is dry goat meat. However, you can use beef, periwinkle, dry fish, or fresh fish whichever you can afford to buy.

  • Kpomo - Using kpomo will make you enjoy the soup if you slice it into small pieces and put it inside the soup.

  • Palm oil - In Africa palm oil is very important when cooking food in the case of cooking Afang soup it is a must for you to use palm oil. It is a local flavor of food.

  • Crayfish - Crayfish is a seasoning that is made from dry fish which is naturally sweet The flavor alone that crayfish give will attract you to the kitchen of your neighbor.

  • Seasoning - seasoning comprises Maggi, salt local Maggi which is known as Dawadawa.

How to make Afang soup

This is one of the easiest ways to cook afang soup. What you should do first is to wash and slice the waterleaf if you haven't done so, and also put the afang leaf inside pound it small, and keep it aside.

  • Begin with seasoning and cooking your meat.

  • Add more ingredients like dry fish, and shrimp and stir.

  • Add the slice waterleaf into the pot and stir and also add kpomo and other ingredients and stir them very well.

  • Once you have put in seasoning, and cooked for some minutes, pour in Palm oil of 1/2 cup, and immediately add the blended afang leaf (Okazi) and allow it to simmer for like 2 minutes.

  • Add meat, stir, and allow it to simmer for 5 minutes and your Afang soup will be ready for eating.

Once your Afang soup is ready for eating you can prepare your favorite swallow which in my case I prepared Garri eba and eat it with the delicious Afang soup I prepared.
