Today I will teach kids about the recipe of sweet dish that is also my favourite one Ras Malai.

Rasmalai is a popular dessert made with soft and spongy cottage cheese dumplings soaked in sweet, thickened milk flavored with cardamom and saffron. It's a rich, creamy and delicious treat that's perfect for special occasions and celebrations. Here's how to make the perfect rasmalai at home.

Ingredients:

IngredientsAmount
Whole Milk (for chenna)1 liter
Lemon Juice2 tablespoons
White Vinegar2 tablespoons
Water (for sugar syrup)1 cup
Sugar (for sugar syrup)1 cup
Cardamom Powder (for sugar syrup)1/2 teaspoon
Saffron Strands (for sugar syrup)A pinch
Whole Milk (for sweetened milk)2 cups
Sugar (for sweetened milk)1/2 cup
Cardamom Powder (for sweetened milk)1/2 teaspoon
Saffron Strands (for sweetened milk)A pinch
Steps to Prepare
Step 1: Adding Milk

In this step, heat the milk in a saucepan until it starts to boil. Reduce the heat to low and add the lemon juice and vinegar. Stir gently until the milk curdles and then strain the mixture through a cheesecloth or fine mesh sieve. Rinse the curds under cold water to remove any sourness.

Step 2: Shaping the Chenna

In this step, gather the curds and squeeze out as much whey as possible. Knead the curds in a bowl until smooth and soft, then divide the mixture into equal-sized portions and shape each into a round ball.
You can also buy the pack from market as I did.

Step 3: Boiling the Chenn Dumplings

In this step, bring a large pot of water to a boil and add the chenna dumplings. Reduce heat to medium and let them boil for 5 to 6 minutes, or until they have doubled in size. Remove from heat and drain the dumplings.

Step 4: Making the Sugar Syrup

In this step, combine the water, sugar, cardamom powder, and saffron strands in a saucepan and bring to a boil over medium heat. Reduce the heat to low and let it simmer for 5 minutes, or until the syrup has thickened slightly.

Step 5: Soaking the Chenna Dumplings in the Sugar Syrup

In this step, add the boiled chenna dumplings to the sugar syrup and let them soak for 10 minutes.

Step 6: Preparing the Sweetened Milk

In this step, combine the milk, sugar, cardamom powder, and saffron strands in a saucepan and bring to a boil over medium heat. Reduce the heat to low and let it simmer for 10 minutes, or until the milk has thickened slightly and the sugar has dissolved.

Step 7: Assembling the Rasmalai

In this step, remove the chenna dumplings from the sugar syrup and place them in a serving dish. Pour the sweetened milk over the dumplings and refrigerate for at least 2 hours, or until chilled.
