Hello friends I am delighted to be part of this food diary with the kids conducted by steemkidss & parents community.
Though there are some meal here which is my first time that I try to cook with help of my kids. So let's go and see what I have for you guys.
My today food diary was so interested, for a long time now I have not eaten akara(beans cake) so today since it was election day I have to eat what I see to survive.
Since we were indoors today without going out to cast our vote I decided to make akara(beans cake) for the family and the funny thing is that it went so well.
Akara is a popular breakfast sold in Nigeria. Though this recipe is one of the friendly Nigerian food. It is one of the street food in Nigeria and you can find it at every busy junction.

HOW TO MAKE AKARA (BEANS CAKE)
If you want to make homemade akara you have to blend the beans with a very little water then
Incorporate air into the bean batter before frying using a whisk, but for me I use my hand mixer to whisk the blended beans, make sure the oil is heated in a normal heat. Then add a little salt.
After mixing it well place frying pan on a normal temperature then pour in the half liter of oil that I bought. Just test the oil first by putting a very little quantity of batter into it. After putting little bit batter he oil should sizzle and the batter should float on top, if this occur the oil is ready to use.
Use your cooking spoon Scoop batter in bits to the ready hot oil, then cook on each side untill the color turn to golden brown
That was how my breakfast was safe
Then in the afternoon I cook achi soup, though since I was born I have not cook achi soup before but I have eaten it, so I decided to try it today with the help of my kids. The whole procedure was so funny.
Achi soup is one of the familiar food you see in a restaurant, so on Friday when I went to the market I was contemplating on what to cook and good enough to me I meet with my formal neighbor in the market so I saw her buying the achi then I ask her how to cook it she then told me that she wants the soup to last that's why she is cooking and she explained the steps to take so I pick interest.

Steps I took to cook achi soup
First thing is that I wash the fresh fish, add canda and my periwinkle and steam it for some minute.

Then I use Red to mix with the achi and I mixed it well so that it will not stick in the pot.

Then I put my dry pot on fire and add red oil then I add onions, and then my already cook fresh fish and I allow it to steam for some times then I add water, when it was well cooked I add the achi mixture then I allowed it to cooked and finally I add aduza leaves and my soup was ready to eat.
You can eat with any swallow of your choice, mine was with Garry.
conclusion
The soup came out very sweet and we all enjoyed it. Here is how my kids help in the kitchen because I ask all of them to come and assist so that if the soup got spoil we know we did it together.
