I hope we are all doing great today and having a wonderful valentine celebration. Happy Valentine to everyone. It's a season of love and love can be shown through food. So I'm here to share my food. My menu today is Coconut Rice.
The ingredients needed for this delicacy are:
1 coconut
3 cups of rice
Crayfish
Pepper
Smoked fish
A bulb of onions
Seasoning cubes(Knorr)
Salt.
- First, I break the coconut, take out the coconut and wash it, then proceed to grating it, now I make use of local grater.
Then I proceed to wash my rice and put in a pot and place it on the stove to cook. Once it's parboiled,I turn it out and wash it.
Then, I go ahead to pound my crayfish and wash my smoked fish in hot water to wash off the smokey smell and clean the fish.
- Once I'm done preparing everything, I set them aside. Then I pour my coconut flakes into a basin and pour in hot water and allow it sit for minutes.
- Then I pour it inside a sieve and allow it drain out the coconut milk, then I use my hands to squeeze the flakes for more milk to come out.
- I squeeze it into a pot I will use for cooking at once.
- In my pot of coconut milk, I pour in crayfish, salt, pepper, seasoning cubes, onions.
- Then proceed to put the pot of fire, allow it boil then pour in my rice bit by bit till I pour in everything.
- Then allow it to boil and dry up.
- Then I serve it hot and enjoy with a glass of water.
Coconut milk extracted from the coconut is anti-microbial, anti-bacterial, anti-carcinogenic, and anti-viral.
The coconut milk contains saturated fat that promotes brain development and bone health.
