The English name for Egusi is called melon. It's proteinous nature. Aside the fact that it is very easy to prepare, It is also naturally sweet. This soup is eaten by almost all the tribes in my Country Nigeria. The soup can be eaten with fufu, Garri or Semovita, some people even eat it with white rice. I will start by listing the ingredients.
Ingredients
Egusi
Red oil
Meat, you can equally use any protein of your choice aside from egg.
Stock fish
Seasoning cubes
Salt to taste
Onions
Fresh pepper
Grinded crayfish
Fresh Vegetables, you can equally use bitterleaf.
Procedures
Measure out the Egusi. With the aid of a dry blender or hand grinding machine grind it and set it aside. I grinded mine in the market.
Wash and parboil the meat. I usually parboil the meat together with the stock fish. Make sure to add ingredients like salt, onions, seasoning cubes to the meat in order to give it a taste. Cook the meat until it's tender.
Use salt and hot water to wash the stockfish in order to remove sand.
After parboiling the meat, add enough water to cook the soup inside the cooking pot.
Allow the water to boil.
Add the grinded Egusi to the pot and allow it to simmer.
Add crayfish, red oil and onions.
Add salt and seasoning cubes to taste.
Allow it to simmer.
Stir the soup
Wash, cut and add the vegetable.
Cook for a while.
Turn off the heat.
Your delicious Egusi soup is ready, you can eat it with any swallow of your choice, I had mine with Eba.
