I have a deep fondness for pumpkin, not only for its health benefits but also because the array of recipes featuring them is simply delightful. Whether you lean towards savory or have a sweet tooth, there's a pumpkin recipe to satisfy every palate. It's a multifunctional ingredient.

It creates a lot of coziness for me because I associate it with Christmas Eve, Christmas, and New Year. In my country, it's one of our must-have dishes on the table. Let me introduce you to something that's ready in about an hour and a half, including preparation. I don't make it often, considering it's a seasonal product.

Here's a ridiculously simple, hassle-free, and downright tasty recipe. The only slightly tedious part is handling the pumpkin, but if you're a regular in the kitchen with this ingredient, you'll breeze through it. Peel and grate the pumpkin coarsely. Lay out each pastry sheet and lightly drizzle with oil, adding layers of pumpkin, crushed nuts, raisins, and a dash of cinnamon. You can cut them into pieces or leave them whole. I prefer to pre-soak the raisins to eliminate the need for extra sugar, plus it makes them more enjoyable to munch on.

Ensure you've mixed all these ingredients well beforehand. Following that, roll it up and replicate the procedure according to the desired number of servings. Transfer it to a greased tray, and you can also apply a light brushing of oil on the top.Bake at 180 degrees Celsius for approximately 40 minutes.

Once it achieves that golden hue, it's good to go. If you fancy a crispier touch, extend the baking time slightly. Take it out, then cover it with a cloth for approximately half an hour to let it soften. If you fancy, dust some powdered sugar on it after it cools. Then, wait for just ten minutes, and poof! It'll disappear before you know it! 💯 😁
