This tuber is an important staple food used in most household around the world. It is a starchy vegetable that can be incorporated into almost any type of meal. It is easy to bake, boil or mash. This edible tuber is relatively easy and cheap to grow and as such are a available in many parts of the world. It is actually an underground tuber usually grown beneath the soil on the roots of the potatoe plant. They are so rich in nutrients, containing vitamins, minerals, and antioxidants which can help with the overall general health of individuals.

TYPES OF POTATOES

There is a world of potato types available to us. All with their special and unique characteristics. Some Include;

RUSSET POTATOES
These kind of potatoes popularly known as Idaho, Burbank or bakers is usually long and oval shaped with different sizes ranging from small to medium to large.The skin is brown in colour with a white to pale yellow interior.

Russets potatoes are one of the best types of potatoes with a high starchy content. They absorb moisture alot, resulting in a light soft texture They are best used in roasting, baking and mashing.


SWEET POTATOES
These kind have a reddish orange skin colour that is quite hard. The interior is usually right, creamy and sweet which makes it a good choice for savoury and sweet dishes. These sweet potatoes are excellent when fried or baked.


RED POTATOES

This type of potatoe also known as red skin potato or red bliss due to their reddish hue colour of their skin. The skin is usually very thin that most meal recipes do not require peeling it. Red potatoes have a low starch content and goes well with boiling and so are an excellent choice for Potato salads and soup, even mashing.


FINGERLING POTATOES

These types come in variety of colours like white, red, yellow, purple, brown and so on. They have very thin skins with the shape of a large finger, like four to two inches in size. This kind of Potato are often cooked whole or simply halved. They are good for roasting, boiling or adding to soups. Their buttery quality makes them very sweet and nutty. This kind is usually recommended for making potato salad as they hold well and boil quickly.


YELLOW POTATOES

This is one of the most popular Potatoe types with a smooth interior and a natural savoury flavour. Yellow potatoes are usually called golden potatoes


WHITE POTATOES
This type of potatoe is also known as kennebec. It has a brown skin with a white starchy interior. It is usually small to medium size and is mostly used for baking and mashing. But is best with frying as they brown evenly . French fries and potato chips made with this variety are usually the best.
