Cooking Process
Step- I
First I took 2 cups of flour (maida). Then add a bit of salt with the flour. Here I used 2 tbs oil too. To make this tasty lucci, you have to need all these three ingredients.
Step- II
In this step, I mixed all these ingredients with the help of my hand. For making
Puffed luchi this is a must-need step. If you wanna make perfect lucci then mix these dry ingredients with light pressure for 4-5 minutes. Then move to your next step.
Step- III
Then I started making dough to make luchi. Here I used water to make dough with these dry ingredients. Do not pour 1 cup of water at first. You have to mix these ingredients gradually with water. This step will take another 8-10 minutes. You have to squeeze the dough.
Step- IV
Now, cover the dough. You have to leave this dough in an airtight condition. I cover this dough for 3 hours.
Step- V
After three hours, I take the dough and make a small round ball. I roll this dough flat and thin. This is a very tricky step. You can use a little oil. It will help you to roll the ball of dough.
Step- VI
Now, take a pan and pour oil on it. Let it hot for a while and when the oil this hot drop the flat bread shape luchi in the pan. Fry it on both sides. You can see in the picture, how puffy it is.
Step-VII
When it becomes brown place it over a tissue paper. It will absorb the extra oil.
Step- VIII
Finally serve it with beef, mutton, chicken, or our traditional curry for luchi which is known as Allur dam (Potato curry)
