This juice is collected from palm trees. Usually, it is in clay pots. This earthen pot is hung on the tree and then the sap is collected from the tree in the morning and evening. We also like to make different pithas with date juice. Drinking this juice removes the weakness of the body. This juice is collected from the third week of the month of Ashwin to the week of the month of Baisakh.

Very cold weather, foggy mornings and evenings and cloudy skies are suitable for this juice. As the temperature increases, the quantity and quality of juice decreases.
To collect the sap from the palm tree, the top of the tree is cleaned thoroughly. After that, the clear white part is cut, and the juice is specially collected. In the winter season, the white part of the head of the tree is cleaned and the pot is hung on the tree.

In the morning the haris are brought down. This juice is usually made and sold in Patali and Lali houses. However, the rate at which the tree hangs often allows insects to enter and turn the sap into an unhealthy sap.
