Chinigura polaw rice(Fragrant rice) | two cups |
Mushur dal (Red lentils) | one cup |
Green chilis | five/six pieces |
Garlic ginger paste | one tbs |
Turmeric powder | half tsp |
Chili powder | one tsp |
Cumin powder | one tsp |
Salt | to taste |
Garam masala powder or mixed spices | half tsp |
Oil | four tbs |
Whole garam masala (Cinnamon sticks, Cardamom pods, Bay leaves) | two + three +two pieces |
Ghee | two tsp |
Hot water | six/seven cups [Appox] |
Cooking Process:
1. At first , wash the rice and dal thoroughly and set them aside.
2. Heat oil or ghee in a pan.when oil becomes hot , add the whole garam masala and saute for a minute.
3. Next , add chopped onions and saute them until they become translucent and tender .
4. After that , stir in the garlic ginger paste and all the dry spices. Cook it for 2/3 minutes until the spices are well blended and the raw aroma dissipates.
5. Then add the washed rice and dal and mix them well with the spices.
6. Season with salt and add hot water. Cover the pan.
7. After 6-8 minutes, when the rice and dal are about 80% cooked, add green chilies, ghee, and garam masala powder. Reduce the heat.
8. After 5 minutes, turn off the stove and let it sit uncovered. This step, known as "Dum e rakha," allows the flavors to meld and the khichuri to finish cooking.
