- Instructions for the preparation.
1. Begin by mixing all the dry spices with the Hilsha fish. Make sure to coat the fish thoroughly.
2. Heat mustard oil in a pan and fry the fish until it's beautifully golden and aromatic. Set the fried fish aside.
3. In the same pan , add more mustard oil and saute a generous amount of chopped onions , green chilies, and dry red chilies. Keep frying until they turn fragrant and caramelized.
4. The crucial step is to carefully separate all the fish meat from the bones. Hilsha fish is known for its numerous small bones, so take your time to do this properly to avoid any mishaps.
5. Once you've separated the meat, the hard part is over. Mash the fried onions, green chilies, and dry red chilies together with salt and mustard oil to create a flavorful paste.
6. Mix the fish meat with the spicy onion paste. If you prefer more spiciness than you feel free to add more chilies.
N.B : You can also enhance the flavor by adding fresh coriander leaves if you have them on home .I had not it at home so I couldn't able to add this with my Varta.
