Traditional Bengali dessert Payesh Recipe

Payesh is a type of dessert that is considered to be traditional in our nation. It is one of our top picks for dishes to eat when we order Bengali food. During celebrations and other important events, it is frequently offered. A soothing and decadent dessert, it can be consumed either warm or cooled, depending on personal preference. In winter, Payesh is cooked in almost every house in our country.

In the beginning, I collected all the ingredients that I needed to make this Payesh.

First, we have to boil the milk in a clean pan. Then, 3/4 cardamom and two bay leaf should be added to the milk to give it a nice fragrance. Then, the milk should be boiled well for a long time.

On the other hand, in a pan should be heated with jaggery so that it becomes liquid. Then, it should be cooled to room temperature. Here, we heat the jaggery & make it as liquid form because if we directly add jaggery to milk, then it can spoil the milk.

This time, we have to wash the rice very well and drain the water. Now, stir the milk slowly & very nicely and add Polau rice slowly in small qty. This should be stirred constantly. Care should be taken that none of the milk or rice could be stuck to the bottom of the pan.

After that, we have to check whether the rice is well cooked. When the rice is fully cooked, jaggery should be mixed in it slowly. Then keep stirring till jaggery gets mixed with milk.

Mix jaggery with milk, and it will be a beautiful reddish colour. The colour should look like this.

Finally, our favourite, Payesh, is almost ready. Now we have to add Raisins, walnuts, and cashew nuts should be given in this. I served it with all of my family members, and everyone loved this.
