What i had for lunch today? Well, since i'm on a tight budget and wanted to eat vegetables that are already in my garden, i thought maybe i can cook something inexpensive but delicious at the same time. And GUESS what, Fried Lumpia mixed with Beef and Vegetables! YUMMY!!!
INGREDIENTS
½ kilo ground beef
3 cloves garlic, crushed
1 pc medium-size onion, chopped
2 pc medium-size carrot, minced
1 pc chayote, minced
¼ kilo sprouted beans (togue)
A pinch of pepper and salt
Stir fry the minced beef without using any oil until the juices from the beef is dried up.
In a separate frying pan, sauté the garlic and onion then add meat. Add a pinch of pepper and salt to taste and stir for 3 minutes.
Add sprouted beans and continue stirring until the sprouted beans is soft or cooked.
Add carrots and stir for another 3 minutes.
Then lastly, add the chayote until is it cooked (do not overcooked).
Ratio would be 1 tablespoon of the cooked mixture of beef and vegetables then wrap it in the lumpia wrapper properly.
When cooking the lumpia wrapper, deep fry it until there is a color change from light yellow to golden brown around 4 to 6 minutes. Drain it on table napkin or paper towel to remove excess oil.
Serve with sweet chili sauce and enjoy! _
Now my lunch is ready. YEY! Thanks for reading! :D
