I was in the mood for healthy, tasty, and very warm for this cold winter night. Nothing better than hot soup that packs an extra punch! After a bit of browsing, I found this Spicy Vegan Black Bean Soup recipe on The Glowing Fridge blog and decided to give it a whirl!
Ingredients:
- Olive Oil
- 1 Onion
- 1 Tbsp. Garlic (minced)
- 1/2 Jalapeño (minced)
- 2 Carrots (diced)
- 1 Red Bell Pepper (diced)
- 4 Tsp. Cumin
- 2 Tsp. Chili Powder
- Red Pepper Flakes
- 1 15 0z. Can Corn (drained/rinsed)
- 3 15 Oz. Cans Black Beans (drained/rinsed)
- 4 Cups Broth
- 1/2 Lime (juiced)
- 1/4 Cup Cilantro
- Salt, Pepper, Toppings
Instructions:
1. Sauté garlic and onion in oil until softened.
2. Stir in jalapeño, carrot, bell pepper, cumin, chili powder, and red pepper flakes. Cook until softened (7-9 mins).
3. Pour in beans, corn, and broth. Bring to low boil and let cook for approx. 20 minutes.
4. Blend half the soup - blend more for a creamy texture or less for a chunky texture based on your personal preference.
5. Stir in lime juice, cilantro, salt, and pepper to taste.
6. Top with crushed tortilla chips, jalapeño, avocado, vegan cheese, etc. depending on your personal preference.
Surprisingly, I had most of these ingredients in the cupboard so I didn’t have to run to the store! I skipped the bell pepper, used frozen corn instead of canned, and used 2 cans of beans instead of three, but it still turned out incredibly flavorful and warm. I also topped it with a bit of (non vegan) cheese.
My attempt may not look as colorful, but it was delicious! There are a few small things I would change next time however.
First, it was a bit watery when I felt it should be a chunkier, almost salsa-like, texture. I would try cutting the broth from 4 cups to only 2 cups.
Second, it definitely needs a salty crunch on the side. I will make sure to have tortilla chips ready for the next batch!
